Lentil Veggie Wrap

 Hearty, filling, and ready in 20 minutes — this lentil veggie wrap is the meal prep lunch that keeps on giving. Smoky spiced lentils, crunchy fresh veggies, and creamy hummus all wrapped up in a soft tortilla. Lunch goals, sorted.

Servings: 2 | Prep: 10 mins | Cook: 15 mins | Total: 25 mins

Ingredients:

  • 2 large flour tortillas
  • 1 cup cooked green or brown lentils
  • 4 tbsp hummus
  • 1 cup shredded romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 pinch salt and pepper
  • 1 tsp chilli sauce (optional)

Instructions:

1. Heat olive oil in a pan over medium heat. Add the cooked lentils, cumin, smoked paprika, salt, and pepper. Stir and cook for 3-4 minutes until the lentils are slightly crispy and well-seasoned. Add lemon juice and stir again.





2. Warm your tortillas in a dry pan for 30 seconds per side or microwave for 20 seconds.




3. Spread 2 tbsp of hummus generously over each tortilla, leaving a border around the edges.




4. Layer the spiced lentils, romaine, cherry tomatoes, cucumber, and avocado across the centre of each wrap.



5. Drizzle with chilli sauce if using, fold in the sides, and roll tightly.



6. Slice in half diagonally and serve immediately, or wrap tightly in foil for a packed lunch.
