Ingredients:
- 2 cans young green jackfruit in water or brine, drained
- 8 small corn or flour tortillas
- 3 tbsp BBQ sauce
- 2 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 tbsp maple syrup
- 2 tsp smoked paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp olive oil
- 1 cup shredded red cabbage
- 2 avocados, sliced
- 4 tbsp vegan mayo
- 1 tbsp lime juice
- Fresh coriander to serve
- Lime wedges to serve
Instructions:
1. Drain and rinse the jackfruit thoroughly. Using your hands or two forks, shred the jackfruit pieces apart, pulling them into strands that look remarkably like pulled pork.2. Mix together BBQ sauce, soy sauce, apple cider vinegar, maple syrup, smoked paprika, cumin, garlic powder, and onion powder in a bowl. Toss the shredded jackfruit in the sauce and let it marinate for 10 minutes if time allows.
3. Heat olive oil in a large pan over medium-high heat. Cook the jackfruit mixture for 20-25 minutes, stirring occasionally and pressing it down with a spatula. Let it sit between stirs to develop crispy caramelised bits throughout.
4. Make the lime slaw by tossing shredded red cabbage with vegan mayo, lime juice, and a pinch of salt.
6. Pile the smoky jackfruit onto each tortilla. Top with lime slaw, sliced avocado, and fresh coriander.
