This vegan cheese bread is the kind of recipe that disappears within minutes of being placed on a table — the kind of bread that turns a simple bowl of soup into a complete, memorable meal, and the kind of recipe that has guests asking for the recipe before they have even finished their first slice. No special equipment, no unusual ingredients, and absolutely no dairy required.

Ingredients
Bread Dough:
- 2¼ teaspoons (1 packet) active dry yeast
- 1 teaspoon granulated sugar
- ¾ cup (180ml) warm water (38–43°C / 100–110°F)
- ¼ cup (60ml) warm plant-based milk (oat or soy)
- 2 tablespoons olive oil or melted vegan butter
- 2½ cups (315g) all-purpose flour or bread flour, plus extra for dusting
- 1 teaspoon fine sea salt
- ½ teaspoon garlic powder
- ½ teaspoon dried rosemary or Italian herbs
Cheese and Garlic Filling:
- 1½ cups (about 150g) vegan shredded cheddar cheese (Violife, Daiya, or Follow Your Heart recommended)
- 4 garlic cloves, finely minced
- 3 tablespoons vegan butter, softened
- 2 tablespoons fresh flat-leaf parsley or chives, finely chopped
- ½ teaspoon garlic powder
- Pinch of salt
For Topping:
- 2 tablespoons vegan butter, melted
- Extra vegan cheese, for scattering on top
- Flaky sea salt and dried herbs, for finishing
Instructions
- Activate the yeast: in a large bowl, combine the warm water, warm plant milk, and sugar. Sprinkle the yeast over the liquid and stir briefly. Let sit undisturbed for 8–10 minutes until the mixture is very foamy and fragrant. If it does not foam, discard and start again with fresh yeast.
- Stir the olive oil or melted vegan butter into the foamy yeast mixture.
- Add the flour, salt, garlic powder, and dried rosemary. Mix with a wooden spoon until a rough, shaggy dough comes together. Turn out onto a lightly floured surface and knead for 8–10 minutes until the dough is smooth, soft, and elastic and springs back when poked. Alternatively, use the dough hook of a stand mixer on medium speed for 6–7 minutes.
- Place the kneaded dough in a lightly oiled bowl, cover with a damp kitchen towel, and leave in a warm place to rise for 1 hour until doubled in size.
- While the dough rises, make the cheese and garlic filling: in a small bowl, mix together the softened vegan butter, minced garlic, fresh parsley, garlic powder, and a pinch of salt until well combined.
- Grease a standard 9x5 inch loaf tin with vegan butter or line with parchment paper.
- Punch down the risen dough and turn out onto a lightly floured surface. Using a rolling pin, roll the dough into a rectangle approximately 30x40 cm (12x16 inches).
- Spread the garlic butter mixture evenly across the entire surface of the rolled-out dough. Scatter the shredded vegan cheddar cheese and fresh parsley generously all over.
- Using a sharp knife or pizza cutter, cut the dough into 12 even rectangles (approximately 4x3 inches each). Stack the rectangles on top of each other in 2–3 piles. Place the stacks cut-side up in the prepared loaf tin — this creates beautiful layers of cheese and garlic butter that will fan open as the bread bakes.
- Cover the loaf tin loosely with a kitchen towel and let rest for 20 minutes.
- Preheat oven to 175°C (350°F). Scatter extra vegan cheese over the top of the loaf and drizzle with the melted vegan butter.
- Bake for 25–30 minutes until the top is deep golden-brown and the bread sounds hollow when tapped on the bottom. If the top is browning too quickly, tent loosely with foil after 20 minutes.
- Allow to cool for 5–10 minutes before serving. Pull apart at the table for the best cheesy, gooey experience.
Notes
- Yeast proof first: Always activate your yeast in warm liquid before starting — a failed yeast means a failed loaf. If your yeast is fresh and your water is the right temperature, you should see significant foam within 10 minutes.
- Vegan cheese melting: Some brands of vegan shredded cheese melt much better than others. Violife and Daiya shreds melt especially well and create beautiful, stretchy, gooey pockets throughout the bread. Check that your chosen brand melts (some do not melt well and will stay firm).
- Pull-apart method: For a spectacular party presentation, use the pull-apart method instead of a loaf tin. Place the stacked dough sections into a greased Bundt pan or round cake tin in a circular arrangement. Bake as directed.
- Quick no-knead version: For an even easier method, mix the dough, cover, and refrigerate overnight. The next day, remove from the fridge, allow to come to room temperature for 30 minutes, then proceed with rolling and filling.
- Storage: Best eaten on the day of baking. Store any leftovers wrapped at room temperature for up to 2 days. Reheat in the oven at 160°C (320°F) for 8–10 minutes to restore the crispy exterior and melted cheese.
