15 minutes prep, one bowl, no stand mixer needed, moist and tender in every single bite, bursting with bright, genuine lemon flavour from both fresh zest and fresh juice, and drizzled with a sweet, crackly lemon glaze that people will genuinely lose their minds over — this is the Vegan Lemon Loaf that is so much better than Starbucks that you will never look at the pastry case the same way again. Made without a single egg or drop of dairy, this loaf is proof that plant-based baking is not just adequate as a substitute for conventional baking — it is genuinely, objectively superior in terms of freshness, flavour, and satisfaction.

Ingredients

Lemon Loaf:

  • 1½ cups (190g) all-purpose flour, spooned and levelled
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • ¾ cup (150g) granulated sugar
  • Zest of 2 large lemons (about 2 tablespoons — this is the primary source of lemon flavour)
  • ¼ cup (60ml) fresh lemon juice (from about 1–2 large lemons)
  • ½ cup (120ml) unsweetened plant-based milk (soy milk is strongly recommended for the best texture and rise)
  • ⅓ cup (80ml) melted vegan butter (vegan butter gives a richer, more buttery result than oil)
  • 1 teaspoon pure vanilla extract

Lemon Glaze:

  • 1 cup (120g) powdered sugar, sifted
  • 2–3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest (optional, for extra brightness)
  • Pinch of salt (balances the sweetness beautifully)

Instructions

  1. Preheat oven to 190°C (375°F). Grease an 8x4 inch loaf pan and line it with parchment paper, leaving an overhang on two sides for easy removal later.
  2. In a large mixing bowl, combine the granulated sugar and lemon zest. Using your fingertips, rub the zest into the sugar for about 30 seconds until the sugar becomes fragrant, lightly yellow, and feels slightly damp. This step releases the essential oils from the zest and maximises the lemon flavour throughout the entire loaf.
  3. Add the plant-based milk, melted vegan butter, fresh lemon juice, and vanilla extract to the lemon sugar. Whisk vigorously until well combined — the plant milk may curdle slightly when it meets the lemon juice and this is perfectly fine. It simply creates a natural vegan buttermilk effect.
  4. Sift the flour, baking powder, baking soda, and salt directly into the bowl of wet ingredients. Using a spatula, gently fold everything together until just combined. Stop mixing the moment no dry flour streaks remain. The batter should be smooth, thick, and pourable. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 50–60 minutes until the top is deep golden-brown and a toothpick inserted into the centre of the loaf comes out clean or with just a few dry crumbs. If the top is browning too quickly, tent it loosely with a sheet of foil after 35–40 minutes and continue baking.
  7. Remove from the oven and allow the loaf to cool in the pan for 15 minutes. Then carefully lift out using the parchment paper overhang and transfer to a wire rack to cool completely — at least 1 full hour. Do not glaze a warm loaf, as the glaze will melt, run off, and not set properly.
  8. Make the glaze: whisk the sifted powdered sugar, fresh lemon juice, lemon zest (if using), and pinch of salt together in a small bowl until completely smooth. The glaze should be thick but pourable — like a thick honey. Add lemon juice one teaspoon at a time until the right consistency is reached.
  9. Position the fully cooled loaf on the wire rack over a baking tray to catch drips. Pour the glaze slowly and evenly over the top of the loaf, allowing it to cascade over the edges naturally. Allow the glaze to set for at least 20–30 minutes until it firms and crackles before slicing.

Notes

  • Massaging the lemon zest with the sugar is the single most important flavour step in this entire recipe. The heat of your fingers as you rub the zest into the sugar releases the essential lemon oils from the peel and infuses them permanently into the sugar crystals. Skipping this step produces a noticeably less lemon-flavoured loaf.
  • Do not overmix the batter: Fold the dry ingredients in gently and stop immediately when the flour disappears. Overmixing develops gluten and will produce a tough, dense, rubbery loaf rather than a soft, tender, moist crumb.
  • The loaf firms as it cools: The crumb will seem quite moist and fragile when freshly baked. Allow it to cool completely before slicing — after 1 hour at room temperature it will be perfectly sliceable with a clean, tender crumb.
  • Lemon variations: Fold ½ cup fresh blueberries, dried cranberries, or poppy seeds into the batter just before pouring into the pan for a beautiful variation.
  • Storage: Store tightly wrapped at room temperature for up to 3 days, or in the fridge for up to 5 days. Bring to room temperature before serving for the best texture and flavour. Freeze (unglazed) for up to 3 months — glaze after thawing.
