INGREDIENTS
• 2 cups rolled oats
• 1 pieces ripe banana
• 1 cups plant milk
• 3 tablespoons maple syrup
• 2 tablespoons cacao powder
• 1 teaspoons baking powder
• 1 teaspoons vanilla extract
• 4 tablespoons dark chocolate chips
• 2 tablespoons peanut butter
• 1 pinch salt
INSTRUCTIONS
1. Preheat and prep: Preheat oven to 180°C (350°F). Grease two small oven-safe ramekins or one medium baking dish with coconut oil.
2. Blend the batter: Add 2 cups rolled oats, 1 pieces ripe banana, 1 cups plant milk, 3 tablespoons maple syrup, 2 tablespoons cacao powder, 1 teaspoons baking powder, 1 teaspoons vanilla extract, and 1 pinch salt to a blender and blend until smooth and pourable.
3. Add chocolate chips: Stir in most of 4 tablespoons dark chocolate chips, reserving a few for the top.
4. Bake: Pour the batter into your prepared dish. Dollop 2 tablespoons peanut butter on top and press in the remaining 4 tablespoons dark chocolate chips. Bake for 22-25 minutes until set and golden on top.
5. Serve: Let it cool for 2 minutes then dig in straight from the dish. The center should be slightly gooey like a warm brownie. Absolutely divine!
