INGREDIENTS
• 4 pieces thick bread slices
• 4 tablespoons chickpea flour
• 1 cups plant milk
• 2 tablespoons maple syrup
• 1 teaspoons vanilla extract
• 1 teaspoons cinnamon
• 1 pinch nutmeg
• 2 tablespoons coconut oil for frying
• 1 pieces fresh berries and maple syrup to serve
• 1 tablespoons powdered sugar to dust
INSTRUCTIONS
1. Make the batter: In a wide shallow bowl, whisk together 4 tablespoons chickpea flour, 1 cups plant milk, 2 tablespoons maple syrup, 1 teaspoons vanilla extract, 1 teaspoons cinnamon, and 1 pinch nutmeg until completely smooth with no lumps.
2. Soak the bread: Dip each slice of 4 pieces thick bread slices into the batter, letting it soak for about 20 seconds per side. You want the bread well coated but not falling apart.
3. Fry until golden: Heat 2 tablespoons coconut oil for frying in a non-stick pan over medium heat. Cook each slice for 3-4 minutes per side until deep golden and slightly crispy on the outside.
4. Serve: Dust with 1 tablespoons powdered sugar to dust, pile on 1 pieces fresh berries and maple syrup to serve, and drizzle generously with extra maple syrup. Serve immediately while hot!
