Smoky, satisfying black bean tacos loaded with fresh toppings and ready in just 20 minutes. These are the tacos that convert even the most dedicated meat-eaters — bold, flavourful, and utterly addictive!

INGREDIENTS
• 8 pieces small corn or flour tortillas
• 2 cups canned black beans drained
• 1 pieces red onion finely diced
• 3 pieces garlic cloves minced
• 2 teaspoons cumin
• 1 teaspoons smoked paprika
• 1 teaspoons chilli powder
• 2 tablespoons lime juice
• 1 tablespoons olive oil
• 2 pieces avocado sliced
• 1 cups fresh salsa
• 2 cups shredded red cabbage
• 1 pieces fresh coriander to serve
INSTRUCTIONS
1. Cook the black beans: Heat 1 tablespoons olive oil in a pan over medium heat. Add 1 pieces red onion finely diced and cook 3 minutes. Add 3 pieces garlic cloves minced, 2 teaspoons cumin, 1 teaspoons smoked paprika, and 1 teaspoons chilli powder and stir for 1 minute. Add 2 cups canned black beans drained and 2 tablespoons lime juice and cook 5 minutes, mashing some beans slightly.
2. Warm the tortillas: Char 8 pieces small corn or flour tortillas directly over a gas flame or in a dry pan until slightly blistered.
3. Assemble: Spoon the smoky black beans onto each tortilla. Top with 2 pieces avocado sliced, 1 cups fresh salsa, 2 cups shredded red cabbage, and 1 pieces fresh coriander to serve.
4. Serve: Serve immediately with extra lime wedges and hot sauce on the side. Taco Tuesday just got a whole lot better!
